Roast Pork:

1 3 -4 pound Pork Roast
1 T kosher salt
2 T Rubbed Sage
1 Tsp fresh ground pepper

Mix the herbs and salt and cover your meat generously with the mix. Place in baking dish and put in preheated 350 degree oven. Add 1/2 cup white wine to bottom of the plan and continue to add 1/2 cup as it dries up, leaving some yummy bits on the bottom. When the internal temperature reaches about 160 degrees (or 2 hours in the oven) remove from oven and cover with foil for at least 15 minutes. Place meat on serving platter and scrape cooked bits up from bottom of pan with 1/2 cup wine (deglazing). Add enough liquid to form 1 cup and add 1 tsp dijon mustard and 1 T apricot jam or marmalade. Stir until bubbling and reduce. Serve with slices of meat.

MeatLoaf:

2 lbs lean ground beef
2 packages Liptons Herb and Garlic soup mix
2 T Worcestershire sauce
2 eggs
3/4 cup Italian Bread Crumbs
1 tsp fresh ground pepper
1 15 oz can diced tomatoes
5 slices platter bacon, chopped
1/2 yellow onion, diced
1 T mustard
2 T brown sugar

In mixing bowl, add meat and the next 5 ingrediants. Mix well and set aside. In skillet on stove, saute chopped bacon and onion until onion is translucent and bacon is cooked. Don't over cook! Add tomatos and simmer until mixture has reduced slightly. Take 1/2 of the tomato/bacon mixture and add to the meat mixture. Mix well and place in baking dish. Form into a loaf. To remaining tomato mixture, add mustard and brown sugar and heat until thickened. Pour over the top of the meatloaf, cover with foil, and bake until done, approximately 1 hour in a 350 degree oven. Remove foil during last 10 minutes of cooking. Let sit for 15 minutes before cutting.

Chicken and Artichokes:

6 boneless, skinless chicken thighs
1 can artichoke hearts
1 cup white wine
1 4oz package feta cheese
1 T dijon mustard
1/2 cup half and half
1 tsp fresh ground pepper
1 tsp chopped thyme

Season chicken with kosher salt and pepper and place in baking dish. Drain artichoke hearts (reserve liquid) and coarsely chop. Mix with feta cheese and thyme. Spoon artichoke mixture over each thigh. In bottom of pan, pour 1/2 cup of the wine. Cover and bake for 45 minutes in a 350 degree oven. In saucepan, mix reserved liquid, wine, mustard and half and half. Add salt and pepper to taste. Simmer until thickened. Remove thighs from oven and spoon sauce over each to serve.

How about a nice stir fry?
cut meat into bite size pieces and
cut/slice your choice of veggies
brown meat in a little oil and add veggies, cook till medium soft
add soy sauce (I use Braggs Aminos) and a little corn starch to thicken
serve with white or brown rice
yummy
