I think the steaks I have are like 1/2" thick.

Thanks for everyone commenting on the fact that the steaks are thin. I didn't know that.

There are nights where I want a small, moderately priced steak and not a massive chunk of cow flesh.

It shouldn't take much time at all for the thickness. I used to have a customer who wanted her 1" thick ribeye Rare Rare Rare. She even told me to just put it on the grill, count to 30 and flip, and count to 30 again. If you have a hot grill or pan, that trick should work for a 1/2" steak to get it rare. Once you get marks (or browning) then flip it. It'll go super-fast, so have your side dishes done!

That's not very thick so you can't cook them very long.

If you're using a gas or charcoal grill:

- Make sure steaks are at room temperature
- Get it very hot but no flame, shouldn't be able to hold you hand over the flame for more than a couple of seconds.
- Rub some oil on the grill
- Salt & Pepper both sides ( I use black pepper and sea salt)
- Cook for 2 min on each side. Don't let the grill flare up.

Inside - If you have good ventilation, use a cast iron skillet.

- Put the skillet on the stove on High. Let it heat up for 3-5 minutes
- Add a little oil with a high smoke temp (canola works)
- Room temperture steaks, salt & pepper
- Cook about 2 minutes per side. Depending on your stove it may be a little more or a little less. You'll have to try a couple.
- Don't mind the smoke

1/2" thick is a thin steak.

For rare, in a hot skillet, it will take about 90 seconds per side.

Over coals, it will take about 120-140 seconds per side.

I genreally eat mine med rare and cook for about 5 minutes on each side. For rare you might want to broil for only 3 on each side.

Thoses are rather thin. I would grill at one minute per side.
