I am over 21, and I always feel a bit embarrassed ordering juice!

If you don't drink, there is no reason to apologize.
Order whatever you wish, whether juice, or anything else.
Here are a few thoughts:
Sprite with cherry and orange or lemon slices.
Tonic water with a dash of bitters.
Perrier or other imported bottled water.
Remember there is nothing to be embarrassed about and you won't embarrass yourself as the evening progresses.

Some bars serve Italian sodas, which are soda water, flavoring, and cream. They are delicious and very hip. Some places also have 'mocktails' which are the virgin drinks but you don't have to say 'virgin'. I particularly like strawberry daiquiris and pina coladas, with or without alcohol (I drink but sometimes I'm the designated driver).
Maybe you could find some places with these things and suggest it when you go out.

Well...you can ask for a Pina Colada without alcohol, or also a Frozen Strawberry or other fruit Frozen Margarita (of course you can ask without the alcohol). I dont really remember how do you call that (cause Margarita is the name cause of the tequila!) but just go and ask for it and ask them to keep tequila.
But if you want to go for a soft drink and fresh...go for the Vodka Tonic ( just a little bit of vodka you can ask)

You could order a pina colada or a daiquiri, virgin.
O'Doul's is a non-alcoholic beer. You could order ice tea.

Ask for a non-alcoholic wine. I've tasted a couple and they're passable (at least to this beer drinker.).

if they have a virgin long island iced tea, order that. (I wouldn't know, I dont' drink either)
if they don't, order a regular iced tea!
