She apologized. But what do I do? Kept eating? Send my salad back? It was very ackward.

She should have immediately waved over the waiter and asked for a replacement..at her expense.
However, if she didn't do this and you are concerned that she would be offended if you did send it back, the best course is to stop eating casually and latter grab yourself a quick sandwich or something after your lunch is over.
If she is a friend, she shouldn't be offended if you sent it back, only embarrassed. But it is your responsibility to accept her apology gracefully and then move on, don't keep on about it or do anything that would make her more embarrassed.

That's funny! My guy said he was talking with a colleague and accidentially spit in his mouth! So... first u eyeball the glob that flew into your food... then u dramatically make eye contact with the coworker and say... "wow I think u may have spit in my salad" then she'll be embarrassed and give suggestions as to what you should do... then u say, "ah, well i'll just get another one, no big deal, be right back"

Stop eating and wait for the main course. Do let her know that she spit in your salad. She might offer to get you a new one. If not, just stop eating the salad and wait for the main course.

I woulda kept eating. Maybe dug that part out. But there would be nothing wrong w/ getting a new salad. Just say your a little germaphobic. SHE SHOULD OFFER TO PAY FOR IT.
