Paprika Chicken with Mushrooms
"There's something about chicken with paprika that is soooo good! Cooking this dish covered makes a nice mushroom sauce that can be spooned over the chicken for serving."

INGREDIENTS
4 skinless, boneless chicken breasts
1 teaspoon paprika
salt and pepper to taste
1 pinch garlic powder
1/4 cup butter
1 onion, sliced into thin rings
1 pound fresh mushrooms, sliced
DIRECTIONS
Pound chicken breasts to 1/2 inch thickness. Sprinkle both sides of each chicken breast liberally with paprika, salt, pepper, and garlic powder.
In a large skillet, melt the butter over medium heat. Arrange chicken breasts in the pan, cover, and cook for 10 minutes. Turn chicken breasts over, and layer the thinly sliced onions and mushrooms on top of the chicken. Cover, and cook for 10 minutes.
Remove lid, and mix onions and mushrooms into the butter sauce. Reduce heat to low, and cook uncovered for 5 minutes.
Serve it over rice

a 20th anniversary dinner is an important event. Try to organize something simple (i.e. a variation of something you have already mastered) but more 'interesting' in the presentation or ingredients choice - the following could be a fun idea:
- before dinner serve a glass of your favourite drinks with some small canapes made with white bread and salmon. To make the canapes, simply spread some butter on your bread, put a slice of smoked salmon, then cut it using a cookie cutter with the shape of a heart.
- you can make a nice pumpkin cream (since we're getting into pumpkin season) - by simply stir frying the pumpkin and a leek, then adding some water and letting it cook until soft. Blend it with milk or cream, decorate the dish with some nice crunchy bacon bits and chive
- a nice roast beef or steamed fish with some miniature veg which you can either stir fry or steam.
- instead of serving a dessert, why not prepare a nice fruit platter (including exotic fruits), and serve it with some biscotti and vinsanto? definitely different , but memorable!!

Standing Rib Roast with Yorkshire Puddings
1 2-to-3 rib beef rib roast (4 to 6 lb.s)
salt & pepper
2 eggs
1 cup milk
1/2 teas. salt
1 cup all purpose flour
Place roast on rib bones in open roasting pan. Sprinkle with salt & pepper. Insert meat thermometer into thickest part making sure it is in center of roast and not resting on bone or fat. Roast in 325 oven until internal reaches 140 for rare (1 /34 to 2 1/2 hrs.); 160 for medium (2 1/4 to 3 /2 hrs); 170 for well done (2 3/4 to 4 hrs.) When roast is done allow to stand at room temperature 15 minutes for easier carving. Place on warem platter and garnish with parsley.
Yorkshire Pudding: In medium bowl with wire whisk beat eggs until foamy; beat in milk and 1/2 teaspoon salt. Gradually beat in flour until batter is smooth. When roast is done spoon off 2 tablespoons drippings and divide into 12 3-inch muffin cups; tilt to coat evenly; turn over to 400. Heat muffin pan in oven about 5 minutes then pour 2 1/2 tablespoons batter into each greased cup Bake about 20 minutes or until puffed. Loosen Yorkshires, transfer to platter with roast and serve immediately.
Serve with baby red potatoes boiled, sprinkled with parsley and butter, a vegetable of your choice, and a spring mix salad with roasted almonds, dried cranberries and a raspberry viniagrette. Molten Chocoloate Cakes for dessert. Perfect.
