If you kept it in the refrigerator, then it should be fine. I would give it no more than 3 days after cooking it. Since your on day #2, it should be okay. I make shrimp primavera all the time and I leave the left overs in the fridge for no more than 3 days and it always taste delicious!

You are probably allergic to shrimp and possibly all shell fish. My mother ate shellfish all of her life and then one day about six years ago she ate some and went to the E.R. The doctors figured out that she was allergic. They told her that obviously this was an allergy that she grew into and just as easily as she grew into it she could grow out of it. So, once a year for four years she would eat a small amount of shrimp. lobster or crab and she would wait to see what happened. Well, after the four years of being very careful with her shellfish intake she discovered that she was no longer allergic and eats shrimp and lobster as much as she wants. So, for the time being you might think about giving it up and then take it slow untill your body gets back on track.

As long as the shrimp was thoroughly cooked, you kept it refrigerated and covered properly, it should be fine for another 2 days.
