Yes, you sure can. I do it all the time in fact. Simply peel the potatoes, cut them down to the size you want and make sure you cover them completely in COLD water. I add a lil salt too. I am not sure why, but my grandmother did the same thing. Good luck cooking.

According to the Idaho Potato Commission http://www.idahopotato.com/faq/index.php#a41 you can leave uncooked peeled potatoes completely covered in water in the refrigerator for up to two days. The potatoes may turn dark during this time but are less likely to do so if you add a tablespoon of lemon juice or white vinegar to the water. If you don't want that flavor, you can get the same result by putting about 1 1/2 teaspoons of salt in the water. In either case, pour off the soaking water and rinse the potatoes in cold water before cooking.

I don't think I would. I'd think they'd get mushy if they're not cold. Unless you live in the south I'd leave them outside. It's colder there. Just make sure to put them out of reach of any passing animals, or keep a heavy lid on them. I can't imagine raw potatoes would be a huge animal attractant, but better safe than sorry. I guess if it's warm outside too just leave them on the stove. Worst case scenario is you have to cut more potatoes tomorrow.

yes, add a good slice of lemon to the water + cover the potatoes completely. if the water goes cloudy or the potatoes are slimey + squishy they're no good, you've left them too long!
