Corn Oil or peanut oil should be used as the flavour isnt too overpowering, this oil would be used in most Chinese restaurants. Good luck.

If you have a good wok, it's gonna get hot so don't use olive oil. Use an oil with a high smoke point. Sesame oil is real good for this. Refined corn oil works good too but, doesn't taste as good. Try avocado oil if you want to spend a little money. Nothing really has a higher smoke point than avocado oil and it has a very different flavor than other oils. Experiment and have fun but, be careful not to burn your house down.

If its for Chinese food then sunflower or groundnut oil is the best as they are fairly tasteless so they don't mask the other flavours, DO NOT use sesame oil to fry in as its too strong & everything will taste of it.
If you want to use olive oil then thats OK.

Most American-Chinese restaurants use sesame oil to cook with. It heats evenly, doesn't have a low flash point (meaning it isn't easy to burn). Peanut or vegetable oil would be too heavy for the other flavorings in the meal.

Hi there! I use groundnut oil or a light, non-virgin olive oil. Virgin olive oil is TOO expensive to use in a stir fry and the flavour is TOO strong and will compete with your other foods. Sesame oil is yummy but it best used as a seasoning (like soy sauce or salt/pepper).

any vegetable oil as it gets hotter which is ideal for stir frys which need to be cooked hot and quickly

not olive oil - burns too easy. Sunflower oil is good - or I have heard Delia before cooking in groundnut oil. I used to do stirfries in peanut oil - it tastes really yum.
