The spas are concessions in 90% of the ships.
There are 2 major companies that run spas:
www.steinerleisure.com
and
www.hardingbros.co.uk

Ive worked for Hardings, but at the retail division, its not a bad company.

Steiner has concessions in a lot of ships, including the bigger ones, Carnival, Royal, Costa, Celebrity etc

Hardings is smaller but good to work.

You will need:
Yellow fever vaccination
Seaman´s Book
Medical
STCW-95 (Basic Sea Survival, First Aid, Fire Fighting, Crowd Management)
But apply first, then if you pass you can get all of the above easily.
I know for a fact that Hardings requires trainning in Southampton.
I imagine Steiners do too.

Anyway if you need more info, let me know
good luck
I did it for 10 years, its a fun life.

Absolutely. Cruise lines have some of the most diverse employees of just about any occupation. I've seen someone from just about every country while on a cruise, I actually find that there are very few American's working onboard. But there should be no problems for you to get a job onboard a ship.
