I also make a hash out of them, Stri fry in Olive Oil sliced Bell Peppers( red is best) & Onions until almost cooked add cut up baked paotoes until warmed, season. Sometimes I add cooked meat to this too, makes up a great 1 dish meal.

I like to cut them up in chuncks & fry in oil with seasoning salt until they are crispy and light brown. Fried potatoes make a nice side dish to just about any meat... they are also good for breakfast with fried eggs and sausage.
