Could I cook the cupcakes today and they will be good to eat on saturday? Should I freeze them or refrigerate them? I know I can't put the toppings on yet I just need to know if I can get the baking out of the way now or not?

When should I take them out of the refigerator or freezer to dethaw before the party? Their mini cupcakes.

You can freeze them for sure.
If you just store them in the fridge, they will dry out, believe it or not! Freezing is best for short term and for freshest flavor.
Take them out of the freezer the morning of the day you want to use them. Minis should thaw in a couple of hours. Thaw completely before frosting them or the frosting won't stick well and it will 'droop' or slide off.

Yes you can freeze them. Be sure to use a good quality freezer bag. Take them out of the freezer a couple of hours before you want to frost them. Oh, and open the bag as soon as you take it out of the freezer so the cupcakes won't sweat as they thaw out.

Freezing cake works not only to help save time because you can do it ahead, but also when you're ready it's easier to frost them. Just make sure you freeze them in an airtight container.
