The tops ( flowerets) of broccoli are too delicate to survive the heat and pressure of the canning process. They'd turn in to mush.

Not recommended for canning because the processing intensifies strong flavors and discolors the vegetable. Broccoli is much better frozen

All tinned veg comes in liquid. Storing broccoli for a long period ruins all those small florets/heads so you wouldn't want to open a tin and eat contents that taste horrible.

I can't imagine broccoli from a can tasting good. But probably the same reason they don't have cauliflower in a can either.

It is one of very few food items that can not hold up to the canning process. It gets mushy. At best you can get "creamed" broccoli.
