portion it per amount that you normally consume in an airtight ziplock bag and deep freeze it. When you need to consume, take it out frozen , either drop it in a boiling water or microwave it.
This can help you keep the rice a long time. If you have a blast freezer even better still, store it immediately after cooking it, the taste and texture is maintain.

What's the best way to store a pot of cooked rice?
I'd like to keep a pot of rice on hand for dishes I cook throughout the week.

Rice does not taste good when reheated the next day.It also dries out and hardens. If you add water to reheat, it just ruins, and can taste awful and feel rubbery. I make fresh rice everyday, which is best steamed in a japanese style rice cooker. If you do not have one, microwave it in a microwaveable container, by covering the rice with water that comes up to the wrist when you place your hand on it. Use a good fitting lid with 2-4 vent holes. The 99p shops have a good container with vented lid. Rice for 4 people can take 12-14 minutes or a bit longer, so you need to do a few batches to know your microwave. If the rice is too hard microwave for several more minutes. If it is dry, next time, you need a bit more water. If too wet, you need a little less water. It makes really nice rice, that is not burned by cooking a little longer if necessary. And no water mess to drain. You will find that as you get used to it, it is a simple and quick procedure, so no need to batch cook and spoil your meals. I would not keep rice longer than a day, if refrigerated only, and only if you have to. Do not keep it out of the refrigerator once cooked, no matter what container you use. You could try storing and reheating in special boilable zip lock bags, which can heat in a saucepan of boiling water for a few minutes. This is good for many other reheat uses as you can imagine. Take care during cooking, in case too much air builds up, and do not burn your fingers when opening, as a sudden flow of steam can cause a nasty burn. This advice comes from many years of living in Japan, and now in England.

My mom always make a lot of rice and has some leftover so she puts the rice in a bowl and covers the bowl with a plastic wrap and puts it in the fridge. I don't think the rice becomes hard because we usually eat it when we don't make enough rice and need more. All we do is microwave it for a few minutes and it should be fine. And don't eat the rice if mold is growing or its super yellow.

Cooked rice can only be refridgerated for 2-3 days at most. Rice is quickly cooked so wouldn't it be as easy to cook for 2 meals in advance?

I make a huge batch of rice in my rice cooker at the beginning of the week. I then freeze it (in freezer bags). I then take out what I need, defrost (usually in the microwave for 5 minutes), and use. It is just like fresh. The frozen rice stays fresh for up to 6 weeks in the freezer.

You do the same as I do, by cooking it ahead of time, however, I store the cooked rice in containers, and when its cooled, I refridgerate them- NOT in the pot!!
