Surely it's 100%? I've looked and all I can find is bacon!!

The rest is added water. 85% is pretty good.

... because we the customers want it pumped full of water, apparently. Although I never remember being asked or stating my preference anywhere.

The extra 15% is water glazing. It's a con that they work over on us the customer. It increases the weight of the bacon so it reduces the amount of meat actually sold by weight and it also makes the meat look shiney in the packet which is supposed to be the way we prefer it, or so the supermarkets tell us.

Mike L, the supermarkets are extremely influential in the processing and production of many foodstuffs since they are such big powerful customers, the suppliers give them what they demand at the price they demand or they have no one to sell to.

First
The supermarket or the grocery store HAS nothing to do with the processing of BACON """ they just sell it"
a country butcher like here (my city) might do some custom work smoking or sausage. but very few.
Now I don't have a package in the house
So at 10:00 am ,,,I will stop at the market to check this silly nonsense out.
Second
Not one answerer claimed to work in a processing plant or they were a butcher.

The rest of it is water, but you can buy 'dry cure' bacon which is more like the old fashioned stuff, before they mucked about with it. It doesn't leave a horrible residue in the pan when cooked either. Much better.

With most bacon there's a lot of brine (salty water), which is absorbed during curing.

Bacon contains some water and preservatives and other stuff.

They often inject the bacon with water. I don't know the reason for this but it may be for weight, so we get less for our money.
