Legally they are supposed to. And it's not a W-2 that you never filled out, it's a W-4. W-2 is what you get at year end from your employer telling you how much money you made and what you had withheld from you paycheck for taxes.

Yes, they are required to pay you for the one day. If you didn't fill out a W-4, they'll withhold at the single/zero allowances rate, the highest rate - even if that's not correct, on one day's pay it shouldn't make much difference if any.
