Personally I'd have a corn on the cob and a salad made from sliced beef tomato, sliced onion and basil leaves with a little drizzle of olive oil (You get the most goodness out of it as a dressing rather than cooking in it) and balsamic vinegar with salt and pepper to taste.

I'm making backed mac and cheese also for dinner tonight.
I'm going to add cooked leftover ham in it and I don't usually serve a side dish with it, but when i do it's usually a salad or mixed grilled veggies.

As long as I can remember, we always have fresh, thickly sliced tomatoes with salt, and canned green beans, and also have a fresh whole green onion on the side. You just take a bite when you feel like it.
I don't know why...just a family tradition. I still eat my mac&cheese that way.
I see how people put fried chicken or fried fish sticks on the side, but that is just not common in my family. Too rich.

*************Dijon Green Beans
1-1/2 pounds fresh green beans, trimmed or 3 can of green beans
2 tablespoons red wine vinegar
2 tablespoons olive oil
2 tablespoons Dijon mustard
½ teaspoon salt
¼ teaspoon pepper
1 cup of grape tomatoes, halved
½ small red/ purple onion, sliced
2 tablespoons grated parmesan cheese
Place fresh beans in a large saucepan; cover with water. Bring to a boil. Cook, uncover, for 8-10 minutes or until crisp-tender. Or open canned green beans.
Meanwhile, for dressing, whisk the vinegar, oil, mustard, salt and pepper in a small bow. Drain beans; place in a large bowl. Add tomatoes and onion. Drizzle with dressing and toss a coat. Sprinkle with Parmesan cheese.

i would say a salad, or a green veggie like peas, broccoli or spinach. i also usually make stewed tomatoes on the side with home-made mac&cheese. i am from PA and that is what us dutchies do. its a great time of year to make stewed tomatotes. Good Luck, whens dinner? :)
PS: have you ever tried using wheat flour instead of white flour in homemade mac&cheese, it ROCKS!

I love fresh steamed broccoli with mac and cheese. I like to blanch it so that it's still bright green and crispy, but cooked enough to eat. Steam for about 4 minutes.

I would use roasted veggies. Pick your fav. I like zuch, carrots, yellow squash...I roast the veggies by putting a little cooking spray on a pan and cooking them at 400 for about 20 min. (Until they are finished). You can put either fresh or dried herbs with the veggies before you roast them.

I would suggest corn, green beans, carrots steamed .Either just one of those vegetables or a mixture. Or maybe a fruit salad or a basic garden salad.
