***************BEEF-BACON WRAP CHICKEN BREAST
4 whole chicken breasts
8 slices of bacon
1 (4 oz.) pkg. dried beef
1 can mushroom soup
1/2 pt. sour cream
Wrap each breast in a slice of bacon. Cover the bottom of a flat greased baking dish, 9"x13" with chipped dried beef. Arrange the chicken breast over the dried beef then mix the mushroom soup and sour cream together and pour over the chicken breasts and dried beef. Bake at 275 degrees for three hours or at 400 degrees for a little over one hour. Serves 8.

**********CHICKEN WITH WHITE SAUCE
1 2-1/2 to 3-pound chicken, cut into serving pieces
5 tablespoons butter
1 bunch scallions, chopped, including 2 inches of the green tops
1/2 pound mushrooms, quartered
2 cups chicken broth
1/2 cup dry sherry
Salt and freshly ground pepper to taste
2 tablespoons flour
1 cup light cream
1/4 cup finely chopped fresh tarragon or 1 teaspoon dried tarragon
1/3 cup chopped walnuts
Dry the chicken thoroughly with paper towels. In a large, heavy skillet heat 3 tablespoons of the butter over moderate heat. Add the chicken, skin side down, and saute, turning to brown evenly on all sides. Remove to a plate and set aside.
Add the scallions and mushrooms to the skillet and cook until the vegetables are lightly browned, stirring frequently. Return the chicken to the skillet. Add the broth, sherry, and salt and pepper. Cover and simmer until tender.
Transfer the chicken and vegetables to a serving platter and keep warm. Reserve the cooking liquid in the skillet.
In a small saucepan melt the remaining 2 tablespoons butter over low heat. Add the flour and cook 3 or 4 minutes, stirring constantly. Gradually add the cream and the reserved cooking liquid from the chicken, stirring constantly with a wire whisk. Simmer until the sauce is smooth, thickened, and hot. Stir in the tarragon and walnuts, taste for seasoning, and pour over the chicken. Serve with buttered noodles and buttered green peas or asparagus tips.

Do you have cheese also? ordinary will do. you could do the chicken breasts in the oven, cut your unpeeled carrots and put them into a roasting dish with some butter, place those in the oven.

wait until the chicken and carrots(whichever comes first) are cooked.

Then in a pan put the diced leeks, onion bacon and mushrooms and chop up some garlic, mixing them with some milk

bring to the boil and mix in some cornflour to thicken the sauce.

Then once done pour the sauce over the cooked chicken breasts, grate a little cheese and put them back in the oven to melt the cheese

and voila!!

You could wrapped the bacon round the chicken breasts then put them in a metal tray, fill the tray half way up the chicken with water, season with salt and pepper, cover over with silver foil shiny side down and put in the oven at Gas Mark 6 for 30 minutes(you can convert Gas Mark to Fahrenheit by googling it).

If you got some potatoes you could peel them, boil them for 20 minutes, chop and fry the leek in a pan with some oil or butter until soft, mash the potatoes, add little bit of milk and butter to the mash, add the leek to the mash potatoes and then season.

With the onion and mushrooms you could make a mushroom sauce to go over the chicken wrapped in Bacon. Finely chop one onion, if you have some garlic chop that as well, slice the mushrooms. Fry the onion and garlic in a pan in oil or butter until translucent and soft, then add sliced mushrooms, fry mushrooms for 3 minutes, then add half or one table spoon of plain flower, sprinkle flower in the pan over the mushrooms and mix in, then add some water with some stock in it depending on how much sauce you want, simmer for 10 minutes until sauce is bit thicker, then add a bit of cream, bit of cheese if you like and season.

Carrots just boil in some water and then serve it all.

Dice the breasts, and simmer gently in water - just enough to cover them.
When the chicken is almost cooked, add the carrots thickly cut.
Then add the bacon, sliced.
Add the leaks.
Gently fry the onions and the mushrooms, then add to the pot.
Add tomatoe puree, herbs like oregano, rosemary, bayleaf.
Add a few dumplings - home made of course - self raising flour and suet - 100g flour to 50g of suet.
You could also add paprika, and turmeric.
Serve with custy bread.
