I'm screwin around in photoshop, not very good yet, but I'm tryin to retouch photos

is there any tool that will only erase what you've done, and leave the photo?

You might want to try the History Brush Tool (press Y).

Nope, You have to do it manually.
You will find it much easier to do if you enlarge the photo several times before using the eraser, This will enable you to get in close.
Be sure to save as or it won't remove the backround

Providing you have not overwritten the original file just close the file without saving and you will be back to square one. Failing that try edit > step backwards
