I'm planning a lazy weekend with just me, my TV and a few snacks for company and I need a few ideas from you guys. My favourite snack is some kind of crispy thing and a good dip to go with it but I've tried the shop bought dips and they're not all that good. Does anybody have a recipe for a really good homemade dip I could try out, it doesn't even have to be a proper recipe maybe just something you stumbled on by accident? I usuall sit with some Pringles and a bottle of salad cream if I'm being really laz but I thought I try something different this time.
I'll leave the question on all week and try any ideas I get out at the weekend then choose my favourite, thanks :)

I stir a package of onion soup mix into a container of sour cream. Easy & Fast

Creamy dip


Ingredients
5 slices smoked bacon, slowly cooked, crumbled
1 stick salted butter
8 ounces cream cheese, softened
2 cups sharp cheddar cheese, grated
Small jar high quality chutney (not major grays)
3 green onions, sliced all the way to the top

Directions
Prepare bacon
Mix butter, cream cheese, and cheddar in a medium size bowl w/ a sturdy wooden spoon. Once mixed, press this into the bottom of an 8x8 serving dish
Spread the chutney over the top of the cheese
Scatter bacon and green onions on the top
You can chill this about 30 minutes but I've served it right up


This is good, for something a little different.

Cream cheese with chopped shallot, herbs and chili flakes.

Aubergine put on a BBQ ( under a grill or on any open fire)until it's soft. Wait for it to cool and take the skin off and put into a bowl add juice of 1 lemon, salt and pepper, 1 crushed clove of garlic and mix. The final ingredient, Tahini. Add the tahini (probably 3-4 tbsp) to your taste, and mix.

It's better left in the fridge for a couple of hours and always great the next couple of days.

PS I add some parsley to counteract the garlic a little.

My FAVORITE treat when I have a TV weekend planned for all myself and me is:
Hot Artichoke Dip
2 cans artichoke hearts, chopped
1 cup manyonnaise
1/2 cup Paremsan cheese
1 small can Ortega peppers, finely diced

Heat oven to 350 degrees F
Mix ingredients together in a baking dish
Bake for 20 to 30 minutes until hot and "bubbly". Do not let it burn!
Eat with crispy crackers.
Goes really well with a dry white wine, followed by a meal of leftovers, scrambled eggs, and any cookies found in the house!

There are two, I really like, french onion soup, (the powdered variety) mix in some sour cream and that's it! Or tin of chopped toms, get the better ones, after all, (you only get what you pay for!) whizz 'em up and add some good chilli sauce keep tasting, don't put too much at once, great with nachos And no cooking!!.

Garlic dip

Ingredients
500g/1lb 2oz aubergines (continental if possible)
3 cloves garlic, crushed
½ medium red onion, chopped
1 tbsp tahini sauce
50ml/2fl oz olive oil
½ lemon, juiced
a pinch of cumin
salt and pepper, to taste



Method
1. Roast the aubergine in an oven at 180C/350F/Gas 4, or preferably char-grill to give a smoked flavour. Cook until completely soft in the middle (40-45 minutes in the oven).
2. Allow to cool slightly and peel.
3. Finely chop by hand and combine with all other ingredients.

Recipe 2

Chili Cheese Dip

2 pounds Velveeta cheese, cubed
4 cans (14 to 16 ounces each) chili without beans
2 cans (7 ounces) chopped green chilies

Mix all ingredients, then heat slowly in Dutch oven until melted. Stir again. Serve warm with tortilla chips.

Get a couple of ripe avocados, a small ripe tomato, one jalapeno pepper, and onion. Mash the avocado, dice 1/2 of the tomato and a couple of tbls of diced onion. Carefully dice the pepper, use gloves or hold with plastic wrap, don't get the juice of the pepper on your hands. Now wash your hands with soap and water. Mix all of this together with salt, pepper, and garlic powder. This is real guacamole. If you want something simpler, get a carton of sour cream and add dry onion soup to it, mix well and let sit in fridge a few hours. Enjoy your day.

Salsa dip

3 Medium Tomatoes, Quartered
1/2 Onion
1/2 Green Chili
3 Sprigs Cilantro
1/2 Bell Pepper
2 Small pieces of Garlic
1/8 Tsp Salt
1 Slice of Lemon

Directions:
Put ingredients into Food Processor. Mix to course, medium or fine texture, depending on your taste.

Red onion dip

1 tb Unsalted butter
Large red onion, sliced
1/2 cup Mayonnaise
Cayenne pepper
Tabasco sauce
Peanut oil
1/2 cup Sour cream
pinch salt
Red pepper small diced

Instructions

1. Saute onion in butter and oil until caramelized (golden brown), about 20 minutes.

2. Cool and combine the remaining ingredients.

3. Mix well and chill for at least 1 hour.

Enjoy your lazy weekend !!!

Here is a crab dip recipe my husband gave me, that is very very easy, and really good. It might be OK for Pringles if you're very gentle, but a hartier cracker, like fritos would probably work better

Crab Dip:
1 6-oz can crab meat
2 T crab juice
2 T chopped onions
¼ to ½ cup Slivered almonds
8 oz cream cheese
1 tsp lemon juice
½ tsp salt
1/8 tsp Tabasco

Mix everything together, and bake at 350 for 20 minutes

Mexican Chiquitos Cheese Dip

1 tablespoon flour
1/2 stick butter
1 1/2 teaspoons chili powder (or more)
1 teaspoon ground cumin (or more)
1 teaspoon paprika
1/4 teaspoon Tabasco sauce, or more
cayenne pepper to taste
1 pound Velveeta cheese
1 cup milk

Can do in the microwave, but you can use a double boiler if you want. Melt the butter and flour together first, then add all the other ingredients and cook until smooth. (cube the Velveeta first).

Baked Cheese Dip

1 cup cheddar cheese, grated
1 cup grated Monterey jack cheese
1 cup grated parmesan cheese
1 cup mayonnaise
1 small onion, finely chopped
1 clove garlic, minced
1 can artichokes, chopped
1 round sourdough bread (10") -- hollowed out

Mix all the ingredients together and hollow out a round loaf of French bread. Put the mixture into the bread, put lid back on and bake for 1-1/4 hours at 350ºF.

Quick, Easy -N- Fast Sunset Dip Recipe

1 (8 oz.) package cream cheese, softened
1 C. shredded Cheddar cheese
1 C. chunky salsa

Spread cream cheese in a 9-inch microwave-safe pie plate. Sprinkle with Cheddar cheese.

Microwave on high power 2 to 3 minutes or until Cheddar cheese melts. Top with salsa. Serve with tortilla chips.

Makes 4 to 5 servings.

Quick, Easy -N- Fast Crab Spread Recipe

8 oz. cream cheese, softened
6 1/2 oz. can lump crab meat
dash Worcestershire
dash garlic powder
cocktail sauce

Combine crab, cream cheese, Worcestershire and garlic powder. Firm into a ball. Cover with cocktail sauce and chill. Serve with crackers.

California Mexican Hot Dip

2 bunches chopped green onions
1 small jar chopped green olives
1/4 cup finely chopped green bell pepper
sliced lettuce
2 (15 ounces) cans refried beans
1 package of taco seasoning or your favorite homemade seasoning
1/2 pound grated cheddar cheese
2 packages frozen avocado dip
4 tablespoons sour cream
1 small can green chilies
1 pint basket cherry tomatoes, quartered
chips
hot sauce

In a small bowl, mix the chopped green onions, ripe olives, green olives, and green bell pepper.

In another bowl, mix refried beans with the taco seasoning.

Layer lettuce slices, bean mixture, vegetables, tomatoes, and grated cheese. Serve with chips and hot sauce.

Spicy Peanut Satay Dip.


2 tbsps of crunchy peanut butter.
2 tbsps of soy sauce
2 tbsps of honey
2 tbsps of lemon / lime juice.
2 cloves of garlic (grated)
i teaspoon of finely chopped red chilli
1 tbsp of sweet chilli sauce
1 pinch of cayenne pepper
2 tbsps of peanut oil.

Combine all ingredients in a bowl and mix together till it reaches dipping consistency.
Taste and adjust ingredients if necessary, ie if its too sweet add move lime juice, if its too mild
add more chilli. Ideally the sauce should be a balance of sweet, sour, spicy and savoury.

If the dip seems too thick, add move peanut oil or a small drop of water to loosen it.



Tasty cucumber dip.


I pot of Greek yogurt
4 / 5 handfuls of chopped cucumber
2 large handfuls of chopped fresh mint
2 cloves of garlic crushed or grated
salt
pepper

Add all ingredients to a bowl and stir to combine.

Dont be stingy with the seasoning as you want this to be tasty and not bland. If you
cant get fresh mint, then fresh coriander would work well either, however i would not
use dried as the recipe really calls for that savoury hit you can only get from fresh herbs.
