Non Alcoholic Cheese Fondue
1 pound Swiss* cheese
2 cloves of Garlic
3 T. All-Purpose Flour
2 T. Butter
1 1/2 cups Milk
½ T. Lemon Juice
1/8 tsp. ground Nutmeg
Salt and Pepper to taste
*You can mix Swiss and Gruyere for a stronger taste. Some people prefer Cheddar.
Dippers – Italian or French Bread cut into about 1 ¼ to 1 ½ inch pieces is a must! We also like thin sausage cut into bite sized pieces. If you’d like you can serve slices of apple on the side.
Peel garlic and slice the cloves in half the long way so the most inner surface is showing. Rub a heavy saucepan with two halves of the garlic for flavoring. Rub the fondue pot with the other two garlic halves.
Grate the cheese and mix with 1 T. of the flour.
Melt the butter in saucepan over medium-low heat. Add rest of flour. Stir well till smooth. Add about ½ cup of milk and stir till smooth. Slowly add the rest of the milk, stirring constantly until the mixture thickens to about the consistency of light cream. Add a handful of cheese and keep stirring. Let the cheese melt and then add another handful and stir until it melts. Repeat the process until all the cheese is melted.
Once all the cheese has been added and the mixture is smooth, you can stir in the nutmeg, salt and pepper. Finally, add the lemon juice. Stir well till the mixture is smooth once again.
Light the sterno and add cheese mixture to the fondue pot. Eat immediately! Spear bread and dunk in fondue and enjoy. Scrape the bottom of the pot with whatever you’re dipping from time to time to keep it from burning.

I know alcohol cooks of and all that, but I prefer not to have alcohol in my home.

Cheese Fondue
1 cup Cottage cheese -- creamed
1/4 cup Milk
2 tablespoons Butter or margarine
1 1/2 tablespoons Cornstarch
1 dash Garlic powder
1/4 teaspoon Dry mustard
3/4 cup Milk
4 ounces Pasteurized process cheese -- - (sharp Cheddar), s
2 ounces Pasteurized process cheese -- - (Swiss), shredded
1 pound Loaf French bread -- - cut into cubes
Mix cottage cheese with 1/4 cup milk in a blender until smooth.
Melt fat in a saucepan. Stir in cornstarch, garlic powder, and dry mustard;
mix well.
Add 3/4 cup milk. Cook over medium heat, stirring constantly until
thickened, about 2 to 3 minutes.
Reduce heat. Stir in cottage cheese mixture. Add remaining cheeses, stirring
until cheeses are melted. Serve with cubes of French bread for dipping into
fondue mixture.
Fondue may be transferred to a preheated fondue pot or chafing dish if
desired. Keep hot during serving by using an alcohol burner, canned heat, or
candle burner.

Non-Alcoholic Cheese Fondue
1 cup Apple Cider (to mix with cheese)
1/4 cup Apple Cider (to mix with cornstarch & mustard)
2 teaspoon Lemon Juice
1 tablespoon Onion (finely chopped)
3 cups Cheddar Cheese (shredded)
1 tablespoon Cornstarch
2/3 teaspoon Mustard Powder
White Pepper (to taste)
Heat the cider, lemon juice & onions on medium low heat in your fondue pot
Slowly add the cheese while stirring
Mix cornstarch and mustard in 1/4 cup apple cider
Add mixture to cheese
Add white pepper to taste
Note: if too sweet, add more lemon juice
To Dip:
Italian Bread (or any crusty bread) cut into bite-sized cubes
Vegetables - Broccoli, Cauliflower, Bell Peppers, Mushrooms, Potatoes, etc.
Pita or Flat Breads

Use any fondue recipe that appeals to you but use one of the following substitutions for the wine or beer...
Wine 1 cup
1 cup chicken or beef broth
OR 1 cup fruit juice mixed with 2 teaspoons vinegar
OR 1 cup water

Buy a friend a bottle, and let her take it home only after you keeping out enough for the recipe.
Put it in a lock top container and put it in the freezer, and far back or under things as possible. Or better yet start the fondue, before the friend walks out the door and get the wine to cooking.
Or buy the 8 ounce bottle of wine, I think that is enough and cook as soon as you get home. Take the bottle to a neighbors trash.
Get a bottle of sparkling juice, white grape, and open it up.
Drink enough of that, so it looks like it was what you used.
That way anyone with a drinking problem, if that is your reason , will think it is that.
I am racking my brain, to try to find a substitute, but the taste of wine is so needed in cheese fondue.

i bet chicken broth might work as a substitue.
shred 1/2 cup medium cheddar and 1/2 cup swiss and put into a big zip lock bag with two tbsp flour, shake til cheese is coated.
bring 1/4 cup of chicken broth to a boil and slowly add cheese while stirring. lower temperature so cheese doesn't burn but still melts. after all cheese is added, add salt, pepper and a garlic powder to taste.
i normally use beer, but if you try it with chicken broth, let me know how it turns out!
