It is made to be used sparingly. When you take a swig from the bottle you are taking in a lot of undiluted flavors and they overwhelm your taste buds.

No sweetener has been added to the extract. However; when combined with sugar in baked goods the flavor is enhanced.

It's just really strong in the bottle, and when it's diluted in batter it tastes better. Plus the sugar in whatever you're cooking makes it taste good too.

I was wondering the exact same thing the other day.....I think it's because it is super concentrated, and when diluted such as in a cake mix it is yummy!

You could say the same about salt. I wouldn't eat a teaspoon of it but it's great on popcorn. Too concentrated.
