I'd use a whisk if that's all you have.
Well if you're going to substitute ingredients, at least use the same amount of liquid that the recipe asks for.

Don't worry about whipping the cake batter with your electric mixer. I always mix by hand either using a fork or a wire whisk - either will do just fine with great results.
My best advice about the applesauce is to use 4 oz of applesauce and about 1 Tbsp of oil. You could probably leave out the oil if you prepare the baking pan really well.

1. Use a wire whisk, but whip it thoroughly, as you have to aerate it to make it fluffy. Electric beaters do this fairly quickly, but human arms can get tired..
2. If the oil is the ONLY liquid ingredient, use half applesauce and half skim milk to add up to the oil measurement. If there are other liquids, substitute the same amount.

1)Half the time, growing up, our mixer was out of commission. I have made many cakes and cookies using good old elbow grease. A regular wooden spoon if the batter is thick or the whisk if thin would work.
2) I don't know, I always use melted butter instead of oil.

go ahead use the whisk, good for your muscles. Use about the same as the amount of applesauce as the oil called for in the recipe

All great answers -- if you are making a chocolate cake try using a little brewed coffee as some of the liquid. Iy really perks up the chocolate flavor
