Yes I could. He would need to be open minded, not afraid to think outside the box, tolerant of other's beliefs and definitely someone who thinks for himself.
I know that there are christians like that out there. I've known a few of them.

speaking as a christian
most Christians who are devout and sincere in their faith would choose a christian mate as their life partner over a non christian
the bible says about not being unequally yoked - if a christian ends up marrying a non christian then some of the compromises made can have a greater impact on the ability of the christian to life as full a christian lifestyle as they may have otherwise wished to have done - plus what to dow ith the kids

I haven't, but I imagine I could. Other things--as you say, intelligence and open-mindedness--are much more important. So long as I wasn't feeling as though he were trying to convert me all the time, it wouldn't be a problem. My significant other is an atheist pagan, so we don't agree on some stuff...it hasn't been an issue.

Great. It's all about respecting another's beliefs. You just can't go around ridiculing what they believe in because it it abusive and hurtful. You also do not need to agree on every detail.
But sharing the holidays is a great place to start! That's fun!

I was married to an "ex-Christian"- that was the probably why it lasted as long as it did- almsot 22 years! Now, if I were to ever marry again, it would only be to another Jew. In fact, I wouldn't even date a non-Jew now.

Yes I have and we've been together 11 years total - 8 of them married.
My husband is a European christian and I find them to be far more open-minded.

I have never had a relationship with a Christian now that I think about it

Yep. Nice Jewish girl. Married her, too.
Lasted fifteen years until I went to seminary. She freaked out, filed for divorce.
How's it workin' out? Not too bloody good, I'd say.
But life goes on and both of us are happily married by the grace of God - both of us to people to whom we are "equally-yoked. MUCH better that way!
