Garlic is gluten and lactose free. Soy beans are gluten free. However, soy sauce is not gluten free because they use wheat to make it, as well.

You can take it that any fresh fruit, vegetable or meat is gluten free - i mean any that have not been processed. If it has been processed, you need to check the label carefully. Words like starch probably mean you shouldn't eat it (unless it actually says potato starch, for example, which would be ok). Malt is something else you can't touch.

This article: http://www.nafwa.org/blog/?p=145 will tell you what to avoid if you're going gluten free - if you need to avoid lactose as well, then you need to avoid milk, cheese, butter and yoghurt as well.

Soy is made from soybeans so its basically the same thing. Soy is a very common alternative for gluten free. It is a plant so its also lactose free. Might I suggest these sites since it sounds like your new to the GF life and might need some guidance.

Soy is made from soybeans. Soy and garlic are naturally gluten-free. Gluten occurs in wheat, rye and barley. Additionally, oats are usually contaminated with gluten because oats are shipped and processed in the same containers and facilities as wheat. Certified gluten-free oats are available at some health food stores.
