The soup tastes fabulous, but I'm still using the wrong kind of bread and cheese. What kind of each complements the soup?

You should use a very crusty french bread. Available at your local supermarket, and swiss cheese. You can buy an expensive swiss and grate it, or you can buy Finlandia swiss at the deli counter in slices and just lay that on top of the bread. MMM homemade french onion soup sounds so good right now. Maybe I'll make some for dinner tomorrow. :)

I usually prefer a very hard crusty french bread, and a very strong provolone cheese. You might consider addding some extra black pepper if you don't already.

Gruyere cheese is the classic, on top of sourdough.

I use sourdough and provolone. And I agree, it's really fabulous.
