I found some great information from the food network website -
The easiest way to do it is to slice off the top end (the part that looks like a crown), then make several shallow cuts from north to south. Once you've made the cuts, immerse the whole pomegranate in a bowl of water, and gently break the sections apart. Using your fingers, pull the red seeds away from the white pith. Discard everything that floats (pith and peel float; seeds sink), and drain the seeds in a colander.
The seeds are great as a garnish, or, you can make juice by putting the seeds in a blender, and then straining the resulting liquid through a sieve or cheesecloth. One pomegranate should yield about half a cup of juice. To make pomegranate molasses, bring the juice to a boil on the stovetop and simmer until thickened to the desired consistency.

You cut them in half around their 'waist'. You can hold the halves over a bowl, or chopping board or your hand and bash them with a wooden spoon so the seeds fall out. This way, you'll catch the juice, too.
You can juice the seeds, add the seeds to salads. They go paticularly well with a Morroccan vibe: lamb and mint for example.
You could even reduce the juice with some sugar to make a syrup that's a good pick me up for stews and soups, can be used as a cordial or on ice cream...

OH MY! Please contact me - I'll pay for the shipping and you can send me some! But, my kids love to just peel, pop and eat em! Other than that - Clean out those little seeds and add them to the top of your tossed salad! Makes a great crunch and a tasty topping. Other than that - If you have enough of them and time and lots o friends - get em all out and make wine! It's absolutely fantastic!

you half them, them uses a spoon to pop out the seeds for a salad, topping etc. otherwise you can sit cross legged on the floor and spend 2 hours with a pin getting every single pip out like i did as a kid, but my word the latter is so so much more satisfying !!
