I take the roast and all of the basics you've listed, put them in the crock pot with a half cup of beef broth and set it for 8 hours. When I get home the meat is fork tender and the veggies are good to go. One note: the veggie have a tendencie to brown a bit - but they are delicious!

This is only way that I make pot roast anymore because it turns out so tender.

Crock Pot Roast

Shoulder Roast
Variety of veggies
1 cup of Merlot wine

Poke holes all around your shoulder roast and put it in the crock pot. Cover your meat with the wine. Add veggies and season with a sprinkle of season salt, garlic powder and cracked black pepper. Put the lid on and cook on low for 6 - 8 hours if meat is frozen, 4 - 6 hours on low if meat is thawed.

Take your roast - beef or pork - rinse well, then place in bottom of crockpot. Add potatos, onions, celery, carrots & a clove of garlic. In bowl, mix 1 pkg Lipton onion soup mix, 1 can cream of mushroom soup & 1 soup can of water. Pour over roast, then add 1 stick of butter and salt & pepper. Cook on low for 8 - 10 hours, leaving lid closed. Serve with fresh coleslaw & homemade cornbread!! A southern delight!

Just get a roast, brown it in a pan, then put it in the crock pot, add your vegetables, and add beef broth to cover, then let it cook for 6-8 hours, depending on your level of tenderness.
