To enjoy uncompressed Multi channel audio formats like DolbyTrueHD and DTS HD Master, how would the HDMI connection be made, one cable from the player to the display, then another cable from the display to the surround reciever? Or is there only one cable used?

To access DolbyTrueHD or DTS HD you will need both an AV receiver and an HD player that support these formats (they are part of the HDMI 1.3 spec). The TV side is not that important, since most of them have 2-ch audio only.

So, connect player to receiver via HDMI.
Then connect receiver to TV via HDMI (for video)
