Oh, i just read farther down and it says that s an alternative you can add cream in it too, but can have it either way, what would it be like without cream?

I never put cream in my Carbonara it is very lovely and my kids like it - I have had it at restaurants with the cream and I find it too rich.

I have this recipe and I like it as it is - and it is much healthier. Try it both with and without and see which one you like best - I find it a really useful dish for speed and fillingness (sorry!) as I normally have all the ingredients required to make it close at hand. I also like Nigella Lawson's version but this is closer to the original cream-loaded restaurant style one - strictly speaking this is more trad but it's up to you which one you like - there is no right and wrong, only whether or not you enjoy it!

That is the original recipe, carbonara is not meant to have cream in it. Personally i prefer it with the cream even though that meant that my parents almost dishonoured me as i am Italian!!!

Authentic carbonara has no cream. The eggs are the sauce. I've read it originated with miners who took their meals with them. Nothing could be refrigerated, so they would take pasta, boil and drain it, crack an egg and add prosciutto. It developed from that.

When I had carbonara in Rome it did not have cream in it so I would assume that is the correct way. Certainly I don't put cream in when I cook it - it's much tastier that way!

The original recipe is without cream, but as you then later read, she does say that cream is sometimes added. I confess, I prefer the cream, but as I rarely have it, it is okay!

I have always used her recipe to make carbonara but the recipe i have uses creme fraiche, does it have that as one of the ingredients? Anyway, its a really good recipe...best carbonara ever i love it
