The crunchy outer part of the roll mixed with the veggie/soy sauce/sesame oil filling so soft with crunchy and the sweetness of the veggies. I have a Chinese Cookbook that says every meal should have the 4 flavors in it - salt, sweet, hot (spicy), and sour. Depending on what's in your eggroll, all the flavors will be there (counting your sauce). Supposedly if a meal has all four, your "hunger" will be appeased.

The fatty ground pork plus the crunchy cabbage and crunchy lumpia wrapper is what I think makes them so good.

It's probably the fact that they are deep fried. That is what makes things like, french fries, onion rings, breaded mushrooms, (well, breaded any vegetable) taste so good.
