and I'd like to use that to make something extra special. I don't think I want to do a fondue because the 2 of us never finish it all and the good chocolate will mostly go to waste. I am looking for some ideas..maybe a souffle, pudding creme brulee? Not sure! Whats the yummiest chocolate dessert you've ever had? I have a great dessert wine all set to go. Thanks in advance!

Chocolate Amaretto Marquise

This cake requires no baking, it chills overnight in the refrigerator.

INGREDIENTS:

1 Tablespoon sunflower oil
7-8 Amaretti cookies, finely crushed
1/4 cup almonds, toasted and finely chopped
1 lb. bittersweet or unsweetened chocolate, finely chopped
5 Tablespoons Amaretto liqueur
5 Tablespoons corn syrup
2 cups heavy cream
Garnish: cocoa powder for dusting
For the Amaretto cream:
1-1/2 cups heavy cream
2-3 Tablespoons Amaretto liqueur

PREPARATION:

Lightly oil a 9-inch heart pan. Line the bottom with parchment paper and oil the paper.
1. In a small bowl, toss together the crushed Amaretti cookies and almonds. Sprinkle them into the bottom of the pan.

2. In a medium saucepan over low heat, combine the chocolate, Amaretto and corn syrup. Cook, stirring often until the chocolate has melted and the mixture is smooth.

3. Remove from heat and allow to cool about 8 minutes.

4. While the mixture is cooling, pour the cream into a chilled bowl and whip until it begins to hold its shape. Stir a large spoonful into the chocolate mixture to lighten it. Quickly add the remaining cream into the chocolate and gently fold in.

5. Pour into the prepared pan, on top of the cookies and almonds. Smooth the top with an offset spatula.

6. Cover the pan the plastic wrap and chill overnight in the refrigerator.

7. To unmold the marquise, run a thin bladed sharp knife under hot water and dry carefully. Run the knife around the edge of the pan to loosen and invert onto a serving plate. Carefully remove the paper.

8. Whip the cream with the Amaretto to soft peaks.
To serve:

Dust the top of the cake with cocoa powder. Cut into portions and serve each with a bit of the Amaretto cream.

This is a very wonderful light dessert and the recipe makes 4 servings. It's like a dessert pancake with a custardy texture in the center. You sprinkle powdered sugar over it and place a strawberry, sliced and spread out, over the top. You could put a little cream sauce on the plate, drizzle it with a little of your chocolate bar and top with this dessert. It would be absolutely beautiful to serve, wonderful to taste, and you won't be eating leftovers for a week.

STRAWBERRY KROPSUA

4 strawberries
1 egg
1 1/4 T sugar
2/3 c milk
1/3 tsp vanilla
1/3 c flour
1/3 tsp oil
1/3 T powdered sugar

Slice strawberries, leaving the stem end intact (you will fan out the bottom end when you place on the dessert). Heat oven to 425º and place a 7" cast iron skillet in the oven for 10 minutes while making batter. Beat egg and 1 1/4 T sugar in a bowl with your mixer. Then add the milk and vanilla and continue to beat. Add the flour and incorporate with a wire whisk. Take the skillet out of the oven, brush it with the oil, and pour the batter in the pan. Bake in the oven 20 minutes until fluffy and golden on the edges. Remove from the oven and let sit for 10 minutes. It will fall a little - not to worry. Sprinkle with powdered sugar. Fan out the strawberry and place on top of the powdered sugar.

Again, if you placed a nice cream sauce on your plate, drizzled your chocolate over the cream and topped it with this dessert, it would look splendid!!

you could make a chocolate dipping sauce by heating it gentley with single cream and a table spoon of caster sugar. this will stay sauce based. use it to dip strawberries in. its delicious. good website for recipes is www.reciprzaar.com
