First boil the potatoes as normal. Mash them in a saucepan and add some margarine/butter and add some herbs parsley/dill. Put some flour on a bread board and put some potato on the board and pat it flat about the size of a fish cake. Beat an egg in a cup, then brush it all the over the potato cake. Cover in breadcrumbs then shallow fry both sides till cooked.

Scottish Potato Scones

1 cup warm mashed potatoes
1/3 cup melted butter
1 teaspoon salt
1/2 cup all-purpose flour (sieved)

Preheat a 12-inch seasoned cast-iron frying pan or griddle over moderate heat.
Mix together all ingredients until thoroughly blended.
Turn the dough out onto a floured board and divide into thirds.
Roll into a circle about 1/4 inch thick.
Score each circle into 6 wedges.
Sprinkle the griddle with flour and bake each circle for about 5 minutes, until edges begin to brown, turning once to cook both sides.
Serve hot or cold.

450 g (1 lb) floury potatoes peeled and cooked
1 x 2.5 ml spoon (½ tsp) salt
50 g (2 oz) butter
100 g (4 oz) Self Raising Flour

1 Mash potatoes, add salt and butter and flour to give a stiff mixture.
2 Turn out on to a floured surface, knead lightly and roll out to a thickness of 1 cm (½ inch).
3 Cut into triangles and cook on a hot greased griddle for 4-5 minutes on each side. Serve hot.

My Gran used to make Teddy cakes - baked in the oven with a rind of bacon on top - delicious. All I can personally remember is that you need ready-boiled potatoes, flour and salt-to-taste. I've posted a couple of links below - a savoury and sweet version.

boil and mash potatoes with a little butter add some of your favourite herbs a little onion if liked some grated cheese and some chopped red chilli add i beaten egg then flour hands and shape into round cakes chill in fridge for at least half hour to firm up then dip in flour then into beaten egg then into breadcrumbs and fry in bit of butter and oil mixed until brown on both sides and heated through enjoy

Here is an old Irish recipe my dad used to use. grate a large potato, and mix in chopped onions, and a tablespoon of flour,to bind the mixture. shape into patties, heat some oil in a frying pan, and fry the patties for a couple of minutes on both sides.

try this one..grate the peeled potatoes..put some olive oil in the pan... put about 2-3 tbsp grated potatoes and make it into circles...add some salt and pepper to taste.fry til golden brown each sides..!
