do ya have a tried and true recipe for deliscious carrott cake?

This is our family recipe for Carrot cake that has always been a hit. But recently I was making it and didn't have enough carrot to finish the recipe so I substituted part of the carrot for shredded zucchini and people loved it more than the old family recipe!! It made it really nice and moist. Here's the original - just substitute half the carrot for zucchini to repeat what I did.

CARROT CAKE

2 c sugar
1 1/2 c salad oil
2 tsp baking soda
1 tsp salt
2 tsp cinnamon
4 eggs
3 c finely grated carrots
1 c pecans or walnuts (I used walnuts this time - normally pecans)
2 c flour

Beat eggs and add sugar. Add the oil, carrots, and nuts. Sift the flour, cinnamon, salt and baking soda and add to the carrot mixture. Pour into a sprayed sheetcake pan and bake in a preheated 350º oven for 45 minutes or until a toothpick comes out clean.

Here's the frosting my mother always uses:

CREAM CHEESE FROSTING

1 box powdered sugar
1 stick butter - softened
8 oz cream cheese - softened
2 tsp vanilla

Cream the butter and cream cheese until light and fluffy. Add the vanilla and part of the powdered sugar to desired texture and sweetness. (I always use less sugar than my mother does so I didn't use the whole box.)

You could also just glaze the carrot cake if you aren't fond of Cream Cheese Frosting.

This one is great. But if you ever want to purchase a carrot cake, the best is at Sam's Club. It was addictive -- it was THAT good. I couldn't stop eating it, and I was on a diet. So, if you want to ever just buy one, that is the best you can get.
