STIR-FRY

1/2 medium onion - chopped
1 stalk celery - sliced on the diagonal
1 carrot - sliced on the diagonal
1 garlic clove - minced
1/4 head cabbage - shredded
1 baby bok choy
10 pea pods
2 c bean sprouts
whatever kind of lean meat you want to use - sliced
1 tsp chicken base (like a bouillon cube only in a jar and moister)
2 T soy sauce (can be light sodium kind)
1 T oyster sauce
1 tsp sesame oil
black pepper - fresh ground
2 T oil

Put the chicken base in a bowl. Add a little hot water to dissolve (smash it with a spoon to help it dissolve). Then add the soy sauce, oyster sauce, black pepper and sesame oil and stir. Set aside. Place the 2 T oil in a skillet. Heat it over medium heat until the oil is hot (test by putting a small piece of onion in there to see if it starts to sizzle). Add the onions and garlic. Cook until the onion is translucent (you can see a little through it). Add the celery and carrot and cook 2 minutes. If the onions are browning too fast, add a little of the mixture in the cup and turn your heat down just a little. Add the cabbage and bok choy. Sprinkle with some of the sauce in the cup. Cook another 2 minutes. Add the pea pods and bean sprouts and pour the rest of the sauce in the cup over everything. Cook until the cabbage has wilted a little and everything is warm. Serve with rice. If you want to thicken the juice a little, then take about one tablespoonful of cornstarch, mix it in a little bit of cold water until it's dissolved, and pour it over the juice in the pan (move the veggies out of the way) and stir it. Bring it back to a boil and cook 1 minute. This gives it that shiny look you see in a Chinese Restaurant when you order Stir-fry.

If you put meat in it, then take your sliced meat first, put in the skillet before the onion and saute it (brown it) until no longer pink. Remove it and set it aside. Add the meat back to the pan when you add the pea pods and bean sprouts with the last of the sauce and mix it all up.

This is good for a person on a low-carbohydrate diet (like a diabetic if you have the meat in it). If you use a low-salt soy sauce, then it's not bad for a person on a low-sodium diet. If you use only a little meat in it (4 oz total), then it is good for a person on a low-fat/low-cholesterol diet as well.

Having meals that are low-carbohydrate will help people who are fat because of eating too much noodles, potatoes, sugars, cakes, candy, etc. Being overweight can lead to diabetes as you age so it's very important to control your weight as soon as you can - before it gets to be too much and much harder to lose. Also, exercise is important. Like walking for 30 minutes each day.

Spinach and Strawberry Salad:

INGREDIENTS
* 2 bunches spinach, rinsed and torn into bite-size pieces
* 4 cups sliced strawberries
* 1/2 cup vegetable oil
* 1/4 cup white wine vinegar
* 1/2 cup white sugar
* 1/4 teaspoon paprika
* 2 tablespoons sesame seeds
* 1 tablespoon poppy seeds
DIRECTIONS
1. In a large bowl, toss together the spinach and strawberries.
2. In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach and strawberries, and toss to coat.
