FRIED DOUGH
1 c. flour
1 tsp. baking powder
1 tbsp. sugar
1/4 tsp. salt
1 tbsp. shortening
1/3 c. milk
Mix dry ingredients in large bowl. Blend in shortening with pastry blender. Stir in milk with a fork until soft dough is formed. On lightly floured surface, knead dough 2 or 3 times. Pat smooth to 1/2 inch thickness. Cut into fourths with a floured knife.
Place two at a time into the deep fat fryer, turning often once they reach the top to brown evenly. Cook for 4-5 minutes. Drain on paper towels. You may sprinkle with cinnamon, confectioners' sugar or butter. Sit and eat.

Hot Pocket and Fried Pie Dough
*STATEMENT BELOW IS FROM THE COOK WHO SUBMITTED THIS RECIPE...ENJOY!!
* This dough is great for making pizza pockets, hot sandwich pockets, fruit pies ("fritter") and whatever you can imagine. It doesn't take long to make if you have those little dough presses that make the crimped edges. This came from my efforts to make fritters for my husband like his mom used to make. Success!! The cook time will be different depending on filling, so it is an estimated time for fried pies. Cooking fillings for hot pockets will increase prep and cook time.
12 pockets
42 min 30 min prep
3 cups flour
1 tablespoon sugar
1 1/2 teaspoons salt
1 teaspoon baking powder
1/3 cup shortening
1 cup milk (more if needed)
- In a mixing bowl, sift the flour, sugar, salt and baking powder, together.
- Cut in shortening.
- Pour the milk into the flour mixture all at once.
- Mix quickly and add additional milk if needed to combine all dry spots or flour if it is to sticky.
- Lightly knead it to make a thick dough.
- Let the dough rest for 10 minutes.
- Cut the dough into 12 equal portions.
- On a lightly floured surface, roll the dough pieces into 5 or 6 inch circles.
- Put two or three tablespoons of filling of your choice in the center of each round, moisten edges with milk to ensure seal.
- Fold over and crimp the edges with a fork.
- Fry a few at a time without crowding, in the hot oil, until golden brown.
- Remove from the oil and drain on paper towels.
Notes: Although this dough can be used to make homemade"hot pockets" the filling should be completely done before enclosing it in the dough.
The dough will cook to fast to get the insides done.
I find it best to place paper towels on a wire rack so the pies remain light and crisp and don't get soggy from the steam.
If you are using the dough for fried pies, it will use one 21 ounce can@ approximately two tablespoons per pie.
Pies should be sprinkled as soon as they are removed from oil so the sugar will stick.
(Sugar and cinnamon mix is great on apple pies.).

Churros / Fried Dough
Chocolate Caliente
2 cups milk
1/4 lb mexican chocolate, Ibarra Chocolate coarsely chopped
1/8 cup sugar
Churros
2 1/2 cups water
4 ounces butter
1 teaspoon salt
1/4 cup brown sugar
1/4 cup corn oil
1 teaspoon vanilla extract
1/4 teaspoon nutmeg
2 1/2 cups all-purpose flour
1 teaspoon baking powder
4 large eggs
corn oil (for deep frying)
Toppings
powdered sugar
cinnamon sugar (equal parts sugar and cinnamon)
Chocolate Caliente:
Bring milk to a boil. Add in chocolate and sugar.
Stir over heat until chocolate is melted and sugar has dissolved. Set aside.
Churros:.
Heat water, butter, salt, brown sugar, oil, vanilla extract and nutmeg to a rolling boil.
Mix flour and baking powder together; stir vigorously into water mixture over low heat until mixture forms a ball (about one minute). Remove from heat.
Beat eggs in all at once. Continue beating until smooth.
Let the dough cool. Place dough in a piping bag with a large star tip.
In a large frying pan, heat oil in a pan 2 inches to 375 degrees F.
Pipe the churros in long rods directly into the hot oil.
Fry in 2-3 batches until golden brown on all sides about 2-3 minutes. Drain on paper towel.
Dust while still warm with choice of sugars and serve with Chocolate Caliente.

Here are two recipes that don't require yeast or baking powder.
INGREDIENTS:
* 1 cup water
* 2 tablespoons butter
* 1-1/2 teaspoon sugar
* 1 cup flour
* 1 egg
* oil for deep frying
* sugar/cinnamon for sprinkling
PREPARATION:
In a small saucepan, bring butter, sugar and water to a boil. Add flour all at once, stirring vigorously with a wooden spoon. Cook until mixture forms a ball. Remove from heat and cool 10 minutes. Add egg, beat until smooth.
Spoon dough into pastry bag fitted with a large star tip. Pipe dough in strips onto a baking sheet lined with wax paper. Freeze 10-20 minutes or until paper can be peeled off. Do not freeze solid. Fry churros a few at a time in hot oil (375 degrees) until golden, turning occasionally. Drain on paper towels and sprinkle with cinnamon-sugar. Serve warm

* dash salt
* 1 cup flour
* oil for frying
* sugar for sprinkling
PREPARATION:
Bring water, oil, and salt to boil in a saucepan. Add the flour all at once, reduce heat, then stir (vigorously) with a wooden spoon until it forms a ball. Let cool at bit, then put into a pastry bag with 1/2 in. star tip. Heat 1/2 in. oil for frying. Squeeze dough into oil in 4 in strips. (Do a few at a time.) When golden on one side, turn over. Drain on paper towels, then sprinkle in sugar. Makes about 15 or so.
The star shape is crucial to a good churro. In order to get the crispy outer crust and the soft bread inside. Without the star shape it just doesn't taste the same. I've tried it both ways. Without the star shape there's too much soft dough in the middle and it doesn't seem fully cooked.

I dont think I've ever used baking SODA in a dough recipe. Baking POWDER, yes, but not baking soda.
Here's a yeastless recipe I like...
2 cups flour
2 teaspoons baking powder
1 teaspoon salt
2/3 cup milk
1/4 cup salad oil
2 tablespoons salad oil

my mom use to take tube bisquits flatten them make a whole in the middle either using her finger or a small cookie cutter. Drop them into hot oil and cook till brown and roll in cinn and sugar
