What do we absolutely, one hundred percent know? Something that cannot be questioned, or argued.
Examples of wrong answers: 1. We know nothing. (That's self-contridicting because that would mean we know something.)
2. We are self-aware. (We can't prove that others are self-aware. This could all be a dream. We don't know if everyone else around us is self-aware or if it's just us because we can only prove to ourselves that we are self-aware)

I really like the answer "everything changes" but I read in early philosophy (early greeks) a contridiction. Change can just be an illusion the mind yearns for while being motionless and unchanging.

I believe that I can contridict any religious answers because that's what keeps faith alive is believing in things, even if something else can be true. Please don't waste your time answering in a religious matter.

1. that not everything can be explained through words... there are some instances happening in the world of languages yet it cannot be uttered by words...
2. that we absolutely know that even if we study philosophy or anything that attempts to give justification to everything for the rest of our lives, we will never be "god or god-like (in a sense that we know the basic meaning of being a god as a 'know-everything' ) to be able to explain everything...
3. mathematics doesn't give an exact answer. it's just a state of mind. the symbols/numbers may vary in different cultures and they can give different answers if they want, and if the money devaluates or it changes its value through time, then mathematics, too...
4.sorry, but i dont believe in your explanation about "change." the fact that you learned that people had thought that it's also a state of mind, that is already your change. also, if before they believe that change is the only thing that is permanent, and now it's not... that is a change.
5. last one... this is permanent and i know this one hundred percent... mas has insatiable wants.

All of humanity knows a lot, but it keeps changing and we find out what we really didn't know. Civilization has changed a lot because of the knowledge we have gained. As individuals we know a lot less, but there are some that know a lot more than others. The older I get the more aware I am of how little I know. The younger I was, I thought I knew a whole lot.

I don't know anything except I that I am self-aware. I know, as keypointist said, that mathematical statements can be certain as long as the definition of the numbers and symbols follow properly. I'm also pretty sure those are the only things I know, but I don't know.

Knowledge is only true of the moment. Knowledge does not transcend time which makes your inquiry problematic.
"I am alive." I can demonstrate this by hypothesis or empirically. In a thousand years, the truth or knowledge will then be false. I will no longer be alive at that point. What is true today is not automatically true for all tomorrows.

I know for sure that in my life I always have a choice and, in everything, it is always me who is doing the choosing.
I think this statement applies true for all people. Some just chooses to believe to be victims of circumstances.
