Tar pits? Uranium laced ores. Shale is not easily converted to oil and the process isn't used in all countires so some may not value it. Acorns. Not all cultures think of them as a foodsource. Specialized naturally occuring foodstuffs that are regional delicacies may not be appreciated in other parts of the worls and thus not be valued.

Yellow corn in many countries is used a cattle feed. It isn't really that good for human consumption. It is nearly a pure sugar, hence high fructose corn syrup. It is probably harmful, to tell the truth.

White potatoes in many countries is used for slop. It was never intended for human consumption. During the Irish Famine, people ate whatever they could find, including white potatoes. People get used to stuff. We still eat frog legs and snails, thanks to the French. It wasn't because that was the ideal food, it was available at all times. Potatoes are also a near perfect starch. It has a higher glycemic index than almost anything except beer. It is in some ways healthier to eat a handful of M&M's than a white potato.
