Cool! I going to build a canoe too. I going to build this small Sailboat, but, first I do a canoe to see how this method work and get a mind set. I wish you gave a link to the one you have, I would like to see.
OK, this be a good size for a starter. Mine is about 11' 8" length overall. I think at the waterline it "supposed" to be around 9' 7". We will see when it finished.
Now, I not sure how wide my Beam will be, but, it not real wide and the plans are saying it fit two children or one adult and one child. IF, there are two people in my canoe using double bladed paddles (Long with paddle on each end like Kayaks use). The two people may have to synchronize their paddling to keep from banging their paddles. I think a single paddle would be OK as one paddle one side and the other paddle the other side. Also, this depends more on how big the beam is on your canoe (Beam being wide). If, you sitting further back and forward it give more distance between the people. Back to the Building. I assume this will require a small mold? Just be sure it straight and level and you be building a canoe. Use good quality Bronze/Copper Nails or Screws. I will use Bronze nails as much as possible as they cheaper than screws. If you use a Fiberglass on the Hull read up on your Resins. There is polyester (Cheaper) and epoxy (More Expensive). You may have to work faster with polyester.
You can do this. Experience comes from starting. Be sure you think of how to cut wood so you have the side you want out. Good Luck!

Sound great, but I always wanted to get a tree and hollow one out with a carving knife. No seams. Good luck though!

thats a good size for 2 people should be very easy to maneuver.
