How would you define the term healthy eating?

Try low carb, low fat, high fibre, high protein, and exercise. The foods are low caloried, and yet filling and healthy. Brisk walking is great for burning body fats.

It is my lifestyle now. I am on low carb, low fat, high fibre, high protein and a hour brisk walk 5 times a week, and I have lost 31lbs/14kg and gained better health. I am now maintaining my 108lbs/49kg for more than a year, with more fruits and complex carbs.

I define healthy eating as good, real, food as close to possible as what God made and the way God intended-- plants and grains and no animals or animal products.

Unfortunately, these days there is the Standard American Diet (appropriately acronymed SAD). Which is essentially, high amounts of meat, dairy, and other forms of overly processed "food".

Not eating well results in poor health. Unfortunately, I see it with my in-laws. They're overweight, they've had health problems, including diabetes, heart problems and cancer. They both have difficulty walking and I think it's from their excess weight. My MIL's doctor has diagnosed he with high cholesterol and I think it's largely from what she eats. (The day she told me, she was eating things like fatty dressing on her salad [I think the heavy dressings ruin the salads], red meat and other junk.) Fortunately, my husband is changing his ways early. I think it's a combination of my prayers (definitely), a rush to the ER a couple of months ago (turned out to just be muscle stress from moving furniture that I couldn't help with as I was seven months pregnant), and the pending birth of our first child, who is due any day.

My parents still eat things that I don't consider healthy, but when I vist them, I don't have to worry about what I might or might not find in their kitchen and I don't have to worry as much about bringing food with me, other than soy. They're also healthy and care for themselves overall. (While my parents are, chronolgically, three to five years older than my in-laws' I think their health is "younger".)

Vitamins and minerals are part of healthy food, so they are included. I personally like this food pyramid, which is a revision of the one from the US federal government.
