Have to take something to a meeting in the morning so it needs to be easy to prepare...

Nancy's Breakfast Squares

8-10 servings
40 min 20 min prep

2 (8 ounce) cans refrigerated crescent dinner rolls, preferably pillsbury
2 lbs regular pork sausage or hot pork sausage (OR 1 pound regular or hot pork sausage and one pound bacon, cut in inch pieces, This is the combo we like.)
4 cups monterey jack cheese, grated
8 eggs
1 2/3 cups half-and-half cream
1 teaspoon salt
1/2 teaspoon pepper

Preheat oven to 425 degrees.
Spray a 15x10x1-inch pan with cooking spray and line it with the crescent roll dough (Usually the four rectangular pieces of dough contained in the 2 packages fit nicely in the pan (side by side)--if not you can manipulate the dough to make it fit--pinch seams together if necessary.
Brown sausage; drain well and crumble over crust.
If using bacon-either fry to desired doneness or microwave it and cut into one inch pieces.
Spread it evenly over the dough and sausage that is already in the pan.
Top with the Monterey jack cheese.
Beat the eight eggs with the half and half, salt and pepper.
Pour over ingredients in the pan.
Bake 20-25 minutes until eggs are golden and set.
Note: If using an airbake pan please add 10-15 minutes to your bake time.
Cut into 12 equally sized "squares" or more--depending on serving size desired--.
May serve with a dollop of sour cream if desired, and an assortment of fresh fruit -- .

Breakfast Fruit Wrap

1 tortilla, preferably whole wheat
2 tsp. "fruit only" strawberry preserves
2 Tbsp. reduced fat ricotta cheese
1/3 - 1/2 cup sliced fresh strawberries
2 Tbsp. sliced almonds, toasted

On at surface, spread preserves on tortilla. Top with ricotta cheese. Carefully top with sliced fruit. Sprinkle with sliced almonds. Starting from one end, roll tightly. Wrap in foil for neater eating. Makes 1 fruit wrap. Variation: Spread tortilla with apricot preserves and use sliced fresh or canned, well-drained peaches.

Breakfast Lasagna
crumbs from 1 - 8" round bread loaf
4 eggs
1 c. skim milk
1 c. nonfat ricotta cheese
1 c. crab meat, shredded
4 T. onion, thinly diced
1/2 c. red and yellow peppers, chopped
1 c. shredded cheese
1/8 c. sliced black olives
1/4 c. sliced mushrooms
Preheat oven to 350 degrees. Spray a 9x9" glass baking pan with cooking spray. Mix the first four ingredients in a large bowl until crumbs are thoroughly coated with egg mixture. Press into the prepared baking pan. Layer the top with the remaining ingredients. At this point, you can chill the pan for up to 24 hours before baking.
When you are ready to finish, cover with aluminum foil and bake the lasagna for 25 minutes. Uncover the pan and bake for 5 minutes more before serving.

This is easy and is usually very popular among everyone who has tried it.....
My Grandma's recipe for Corn Pudding actually a vegetable dish not a dessert..

2 cans of cream corn
1/2 cup of flour
3 eggs
3 cups of milk
1 tbls. sugar
1 tsp. salt
1/4 cup of butter

3 quart casserole dish 350 degree oven

grease casserole dish
beat eggs
add milk and flour
beat again
add sugar, salt and corn
mix very well
add butter to the top in little pieces
cook uncovered for 1 and 1/2 hours

Here's a Brunch Quiche type favourite:
Melt 1/2 cup butter on medium, remove, add:
1 cup all-purpose flour,
1/2 cup frozen hash brown potatoes,
1/2 cup grated cheddar cheese,
1/2 tsp Worcestershire sauce,
1/2 tsp salt,
1/4 tsp onion powder.
Stir well, press firmly in bottom of 9 in pie plate.
Cook 8 slices of diced bacon until crisp,
transfer with slotted spoon to paper towels to drain.
Scatter bacon over potato crust,
Sprinkle with 1 cup swiss cheese,
Sprinkle 1/3 cup finely chopped green onion.
Beat 3 large eggs, 1 1/2 cups sour cream,
1 tbsp all-purpose flour, 1/2 tsp salt, 1/8 tsp pepper,
1/8 tsp ground nutmeg, in medium bowl until smooth.
Pour over onion/cheese/bacon mixture.
Bake on bottom rack in 375F oven for 40 minutes.
Test that knife inserted in centre comes out clean.
Cut into 10 wedges.

Tater tot casserole is always good. Cheap & easy too.
Cook hamburger, season it, add cream of mush soup, put tater-tots on top of it. Bake @ 375* until tots are done then add cheddar cheese, cook it until melted. It's a crowd pleaser in my neighborhood.
