This will sound weird, but if you try it you will love it:
Make tomato gravy.
Peel your tomatoes, dice, and put in a pan with salt, pepper, and just enough water to cover. Bring to a rolling boil, and cook until "mushy". They can be jarred and stored in the refrigerator for several weeks. When you are ready to make them into gravy, it's very easy. Just heat a bit of oil in a skillet (I use bacon or sausage drippings). When the oil is hot, add tomato mush. Stir and heat until bubbling.
This tastes AWESOME on fresh hot biscuits, and makes a great gift if you put it in a decorative jar.

I just made a big batch of stewed tomatoes yesterday and they came out great. I put them in freezer bags so I can take them out as I need them.
This is not a exact recipe but you can change it to your tastes.
Immerse tomatoes in boiling water for about one minute. Cool until comfortable to touch.The skins will peel off very easily.
Heat some olive oil in a large pan and throw in some chopped onions. Cook onions until translucent.
Add crushed garlic according to taste.
Add cut up peeled tomatoes to pan. (I seed them as I peel them).
Add sugar, pepper and salt according to taste.
Simmer for about 15 minutes.
Add torn pieces of soft Italalin bread. Again the amount you add depends on the amount of tomatoes you are cooking and also according to taste.
It's hard to go wrong with this recipe as it is prepared to your liking. Good luck

You could make Salsa or seal them in jars (canning). You can cut up a bunch and put them in a salad, Greek Salad (with cucumbers,green peppers). You can make Tomato and Bacon sandwiches or open faced sandwiches (bread, luncheon meat, tomatoes and cheese, bake in oven for 5 min).

you can cook them and then can them in jars, it's pretty easy, but takes some time.
You could also just give some away to friends, fam and neighbors.
otherwise, looks like you'll be eating lots of tomatoes - try a tomato and basil salad, make your own tomato sauce, stuffed tomatoes with cheese...

It's so easy to make tomato soup and a simple tomato sauce--I would make a few huge batches and preserve them until you're ready to use it.

Get some FRESH (wet) mozarella cheese (in a ball)...slice tomatos, slice cheese, place on plate alternating, sprinkle salt, oregano, olive oil...BAM! mediterranean appetizer/lunch!

I would make a lot of Marinara Sauce and freeze it you can then always add meatballs for spaghetti of make lasagna...even homemade pizza nothing is better than homemade marinara...

They can just be frozen for use in chili or hotdish or soup. They just wont be firm like fresh.
