I'd stick with whole grain breads, but not too many sandwiches.

Arnold Rye is very tasty, hearty, peasant type bread, thin sliced, stands up to the filling, AND makes superior croutons when sauteed in (gasp!) equal parts of olive oil and butter (yes, REAL butter) garam masalla or other spices optional.

Anything with a high amount of fibre is better for you because fibre keeps you fuller long. White bread is just empty calories, not to mention all the bleaching of the flour and whatnot. Even "enriched" white bread or the wonder plus kind arent that great. But on the other hand you need to find something that you LIKE as well, otherwise you wont eat it. I eat rye or 100% whole wheat. The "hardcore" breads like 12 grain or flax dont appeal to me.

it depends on your diet. in my opinion breads with less glutens are better -- rye flour has less gluten than wheat flour -- for rye bread rye and wheat are mixed. pumpernickel should be all rye and probably the bread with the least gluten you can get at the grocery store.

gluten is low carb though so if you are pro-low carb then low carb breads are very high gluten and pumpernickel is probably carb heavy.
