If you are using the standard Toll House Cookie recipe, just double the water called for in the recipe and it should be OK. If you have any almond extract or coconut extract, you could use that instead of the vanilla if you'd like.

Because the vanilla rounds out the flavor of chocolate I would recommend adding some other flavor rounding ingredient, like a couple of tablespoons of strong coffee in place of some of the milk.

I've never had to omit it, but I woudn't let it stop me from trying it....especially if I had a sweet tooth! Hope it turns out ok.
