If it is store bought sliced bread, put it in zip backs in quantities of say four or five slices , so that when you bring it out of the freezer you are not bringing too much out at a time and letting it go to waste.
To de-frost for sandwiches just leave out of freezer and will defrost in a few minutes, maybe 10. I personally make up sandwiches when the bread is still frozen and wrap them in cling film or zip backs, and the bread tastes much fresher when opened out to eat, for work, lunch, picnics anything. If you want toast you can put it in the toaster frozen and cook.

Wrap it well in plastic wrap & foil then put it in a Ziploc bag press out the air before sealing it. This way it won't get freezer burn or develop as many ice crystals. It will also be protected from absorbing any funky flavors from the freezer.

If its hot where you live, let it cool in the house for a while. Then just put it in the freezer some where it will not be smashed. Then just take it out and put in the fridge to thaw when you are ready to eat it.I keep mine frozen, and toast it when I need bread.I live alone and rarely eat bread.
