I want to make a special treat for my husband tonight can someone please recommend an easy way of cooking a couple of cod filets?

BASIL BAKED COD FILLETS

Serves 2

1/2 lb. cod, haddock, or orange roughy fillet
1 tsp. olive oil
1 tsp. lemon juice
1/4 tsp. dried basil, crushed
1/8 tsp. black pepper
Dash salt
2 plum tomatoes, cored and cut crosswise into thin slices
2 tsp. grated Parmesan cheese

Pat fish dry and cut into 2 serving pieces. Combine oil and lemon juice in a baking dish. Add fish and turn to coat both sides. Sprinkle with basil, pepper and salt. Overlap tomatoes in even layer on fish and sprinkle with Parmesan cheese. Cover with foil and bake at 400 degrees, about 10 to 15 minutes or until fish just begins to flake when tested with a fork.

I like to steam my cod. I put a layer of Romaine lettuce in the steamer, place the cod in a single layer on top and then cover with another layer of the Romaine. Steam 20 minutes depending on the thickness of your cod. The Romaine, steamed, tastes like a mild spinach. Serve either with a drizzle of raspberry vinaigrette or with some homemade tartar sauce. You could make some baked fries to go with it if you wish.

Here's a couple of ways. The low fat would be to bake in oven and baste with lemon butter. Or you can crush cracker crumbs in your food processor and add either a small amt of garlic powder, or italian seasoning , or lemon pepper or just salt & pepper. Fry on medium heat until golden brown on both sides and fork flaky. Oh either dip fish in beaten egg mixture or milk. Let me know what you think.

1) In oil, saute enough sliced onion for amount of fish. Place fish in an oiled shallow pan. Sprinkle onions over. Top with tomatoes either fresh sliced or canned, no liquid. Sprinkle with herbs - basil, parsley and oregano. Bake in a 350 degree oven until done, about 20 to 25 minutes, just until fish flakes.

2)1 lb cod fish fillets
1/4 cup butter or margarine, melted
2 tablespoons lemon juice
1/4 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon white pepper
paprika
If fish fillets are large, cut into serving pieces.
Mix butter and lemon juice.
In another bowl, mix flour, salt and white pepper.
Dip fish into butter mixture; coat fish with flour mixture.
Place fish in ungreased square baking dish, 8x8x2 inches.
Pour remaining butter mixture over fish; sprinkle with paprika.
Cook uncovered in 350 degree oven until fish flakes easily with fork, 25-30 minutes. Garnish with parsley sprigs and lemon slices if desired

3)4 each cod fillets boneless and skinless
4 tablespoons butter
2 cups bread crumbs fresh
1/4 cup mixed herbs fresh, chopped
3 tablespoons parmesan, parmigiano-reggiano cheese, grated freshly grated or finely chopped
4 tablespoons butter melted
1 x salt and black pepper

Directions
Preheat oven to 425 degrees.

Remove any bones from fillets with needle-nose pliers.

Melt butter in a baking dish in oven.

In a bowl combine breadcrumbs, herbs, parmesan, enough
melted butter to make the breadcrumbs stick together.

Season to taste with salt and pepper.

Mound each fillet with 1/4 of the breadcrumb mixture and pat
down firmly on fillet.

Place fillets in baking dish with melted butter.

Bake for 20 minutes until the fish is milky white and flaky.

Serve immediately.

i like to marinade them and cook them on the grill. there are several different fish marinades in the condiment isle of the grocery. they tell you how long to cook them.
