To say that God is Infinity, or God is the infinite universe is just playing word games.
I might as well say that God is energy, or God is matter, or the God is all the powdered donuts in the universe. It is just labeling energy, matter or powdered donuts with a meaningless tag.

The universe is thought to have no edge.. So, I think that would mean the universe is thought to be infinite. Even if the universe were finite, space is definitely infinite.
Anyway, God is infinite the way "nothing" is infinite. You can search for nothing all you want, but you will always find something! So, we can never find nothing, or get to nothing, and we'll never get any closer. Depending on what you call nothing, because even if nothing is there, there is still something; i.e., particles, atoms, light, empty space!. But let's say you call empty space 'nothing', well, then there it is! You found 'nothing'! If you call God something, there it is! I found God! In the form of... whatever.

LOL! Can't be that good, cus that all made some sort of sense. 'Cept for the YHWH part. YHWH is 'God' just as any other. Creation isn't infinite, though...it is funded through the energy of the inifinite, so while the 'God' is present at all times within it, we're still somewhat seperate on account of God can't actually BE manifest, on account, as you point out, of His/Her infinitibleness. But Judaism believes this as well, YHWH is only the highest level of human understanding of the concept of God/dess that we can acchieve, thus the name. BEYOND that, yes, there is still God...the same one, only it's beyond our comprehension and is called Ain Soph. ;) Read up on your Ballah peoples! I keep telling you! :P

You presume that everything we will learn is theoretical or abstract.
An interaction with a higher power, or with intelligent aliens could provide needed data.
Some use to assume the same about the universe.
Any new knowledge may lead to having to change your presumptions.

God and infinity are both entities that our simple human minds cannot understand. Even the "educated" people whom you speak of will never understand. God has to be based on faith which is infinite also.

You can't learn about science through reason and logic. You have to study, test, practice, and observe. If you don't believe me, try an experiment or passing a science test without reading any background, just doing what "logically" will happen. Let me know what happens.
I don't claim to know everything about God's nature, i just know that he exists because he's made himself known to me. I don't know the details of all life either, but that doesn't stop me from studying and practicing Biology. There are many things in real life that seem logically to be impossible (like microbes living in near boiling water in hot springs). Don't claim that just because we don't understand something, it can't be real.

Infinity means beyond practical measurement . On older cameras , infinity was shown as a propeller. At the distance shown on the camera, everything was is focus - - infinity .
To me , god is not infinate - - - god is superstition .

It is the nature of God to not be bound by any paradigm. Mathematics and infinity not withstanding.
Any paradigm (religions included) that try to define God is, at best, seriously flawed, at worst, completely wrong.
My money is on "completely wrong."
