I put cajun seasoning on the fish before battering it. Adding it to the dry ingredients dilutes the flavors too much. That said, try using a mixture of flour and cornmeal (50/50). It's the traditional way to do catfish.

I use onion powder, garlic powder, Cajun, cumin, and some black pepper. And really liberal amounts. That's both in the flour for dredging and the flour that makes the batter.

Garlic powder,onion powder and creole seasoning will go good.I like to run my nuggets thru some milk with a little mustard in it.Good eating...

salt, lemon pepper, or dill is great on fish and can be added directly to the bread crumbs....you could even do cajun seasoning if you like it hot!
