Coffee with chicory has always been popular in the South, particularly around New Orleans.
We only drink coffee with chicory. It has a wonderful rich robust flavor for half the cost.
I order a case (12 pkgs) of Luzianne Regular and a case of Luzianne DeCaf about once a year. I mix one package of each and store in a container.
It only takes about 2 1/2 T. to make an entire 10 c. pot of coffee. When we travel, I pre-measure bags of the brew to take with us.
When my husband was deployed, the thing he missed most, next to me, was his coffee.
By the way, the Luzianne Company continued to pay its employees at full pay during the Katrina tragedy. Good socially conscious company.

Coffee made using chicory is big in the South, especially New Orleans. It became popular during the Civil War when coffee was hard to get in the South. Things such as chicory and acorns were mixed with the coffee to make it last longer. Eventually, the coffee ran out and people would brew the chicory alone. While the taste was not always that pleasant, it took less chicory to make a pot of "coffee" than it did when using actual coffee so it was very economical. While getting coffee is not that hard today, some people still enjoy a cup of chicory and the history behind it.

Chicory has been used as a coffee extender, especially in the deep south when supplies of coffee were scarce. New Orleans is noted for their chicory coffee.

chicory is mixed in with the coffee beans. I believe it is to take some of the bitterness out of the coffee. I believe it is a New Orleans thing mostly.

Yes. Before Martha Stewart went to prison, she had a show where she visited New Orleans and was shown how to make chicory coffee.

It is added to some coffees, particularly Luzianne. Straight chicory coffee would be horrible.
In the Civil War coffee was made from crushed acorns.

Yes it was added to coffee all over the world to make the coffee less bitter and to ameliorate the effects of caffeine.
When coffee was first introduced to the west (about 600years ago) it had a deleterious effect on people as would ephedrine today. I know that is hard to believe but is true never the less.
Chicory was added to reduce these effects and to improve the taste.
