Finely chop a couple slices of bacon. Saute it until the fat runs clear in the bottom of the pot. Now cook the beans, water, onions, garlic, spices and salt, using the bacon and all the drippings. Yum!

It depends on if you are using cooked (canned) beans or you are cooking the dry beans yourself?

If you are using cooked beans then just do what the prior poster said. Cook up some bacon and onions and then re heat the beans in that mixture.

If you are cooking dry beans then you can put some salt pork (aka fat back) a bay leaf and 1-2 bottles of beer (depending on how big your pot is) in there while the beans are cooking. You do need at least some water in there. Do not cook the beans in just beer as they will get too foamy. I usually use 1 bay leaf, 1 bottle of ***** Modelo (Mexican beer) and the rest water.

Either method is good although the cook your own way will produce more subtile flavors.

When I couldn't find ham hocks, I used sausages. Cut them up and saute them and keep the drippings.

You need to get some good sausage, such as Holmes, Chappell Hill. Don't use Hill shire, it will make it too greasy.

I'd use bullion if you got it. I prefer chicken but I'm sure any meat flavor would do.
