Let's come up with something that isn't a sandwich variation (the wrap) and something that doesn't heat the roast beef up. I can't see the beef from here, but I imagine it's nice and rare, and making a hot dish or microwaving it will just make it tough.
Idea #1: Faux Steak Tartare
Chop it into crumbles with a sharp curved knife. Serve on crackers or melba toast with different condiments: chopped raw onions, capers, tiny pickles (cornichons), hot sauce, dijon mustard, parmesean cheese shavings.
Idea #2: Faux Pho
Drop slices into very hot broth with noodles just before serving. Have hot sauce, fresh cilantro, sprouts and basil available on the table.
Idea #3: Little Appetizers
Pinch a slice of beef onto cucumber slices. Garnish with dijon mustard and a sprig of dill. Salt and pepper the cukes before you start.

Make a Hot Beef. You need 2 slices of bread, beef gravy, and mashed potatoes. Cut the bread on the diagonal and place 2 of them on a plate about 2" apart. Put 3 scoops of mashed potatoes down the middle. Put 4-6 oz. of warmed roast beef on the slices, top with the other bread slices, and cover the whole thing with gravy. That's a Hot Beef.
My customers loved it, it was the most popular item for lunch.

Lay slices in a microwave container and pour over instant gravy, and place in microwave for 1-2 minutes. Have ready some mashed potatoes and veg of your choice and you have a nice dinner.

You can make hot sandwiches with it, just heat it up with some Au jous (made out of beef bullion cubes and water, you can eat that on crusty rolls with your choice of cheese, or serve it over mashed taters.
You can make wraps out of it, on your choice of flavored wraps, spread some cream cheese on it and pile on the meat and any veggies and cheese you like, you can even slice them up and have pinwheels.
Don't forget you can certainly freeze that meat.

Ingredients
* 1 pound (450 g) Certified Angus Beef ® deli roast beef, thin slice
* 1 long loaf French bread, cut into four equal servings and sliced in half
* Olive oil as needed
* 1 small wedge blue cheese
* 1 package fresh chives, finely chopped
* Fresh ground black pepper as needed
* 1 container prepackaged garlic flavored mayonnaise
* 1 package precooked bacon
* 1 each yellow tomato, thinly sliced
* 1 medium red onion, thinly sliced
Instructions
Preheat oven to 350º F (180º C). Brush French bread with olive oil and toast cut side. Remove from oven and cool slightly, spread blue cheese on one half of each sandwich. Sprinkle blue cheese with chopped chives and fresh ground pepper. Spread garlic flavored mayonnaise on remaining slices.
To assemble sandwich, arrange 4 ounces (115 g) of roast beef on blue cheese side of sandwich. Continue with 4 ounces (115 g) precooked bacon, 2-3 yellow tomato slices, and a slice of red onion.
Slice each portion in half and serve with seasonal fresh fruit or your favorite salad.

If you are serving a crowd, plan to use both crusts from the pie crust package and make two beef rolls. You can also make turkey sandwich slices. Just use thinly sliced cooked turkey instead of the beef!

Comfort Food Sandwiches
Heat oven to 450 degrees.
Remove crust from pouch; place on ungreased large cookie sheet.
Place roast beef, tomato, onion and cheese lengthwise down center 1/3 of crust to within 1 inch of top and bottom edge.
Brush edge of crust with water.
Fold top and bottom edges over filling; fold in sides, overlapping in center and sealing edges.
Cut 3 or 4 slits in top crust to allow steam to escape.
Bake 17-20 minutes or until golden brown.
Cool 5 minutes.
Cut crosswise into 8 slices.
Serve warm.
3.)Tangy Beef Sandwiches
Great way to use up left over steaks or roast beef. Serves 6 people.
Ingredients:
2 tablespoons olive oil
1 cup onion - chopped
1 teaspoon minced garlic
salt and pepper - to taste
1 pound roast beef - thinly sliced against grain
1/4 cup Huy Fong Sriracha Hot Chili Sauce
3/4 cup ranch style salad dressing
2 tablespoons Worcestershire sauce
6 french rolls - sliced lengthwise
In a 10 inch saute or frying pan saute onion and garlic in olive oil at medium heat until tender. Salt and pepper to taste. Add sliced roast beef and stir until hot. Add chili sauce, ranch dressing and Worcestershire sauce. Simmer mixture, stirring often, until sauce is hot and roast beef is thoroughly coated.
Place 3/4 to 1 cup of roast beef and sauce on sliced roll and serve immediately.
NOTE: Left over beef (steaks, roast, etc.) works real well here. Just slice thinly against the grain.
4.) Cheesy Roast Beef Wraps
Traditional roast beef sandwich fillings are wrapped in flour tortillas for a delicious wrap sandwich recipe.
INGREDIENTS:
4 flour tortillas
1/2 cup blue cheese salad dressing
1/2 lb. thinly sliced roast beef
1 bunch green onions, chopped
1tomato, seeded and chopped
4 slices romaine lettuce
8 slices American cheese
PREPARATION:
Place tortillas on work surface and spread with salad dressing. Layer remaining ingredients on tortillas and roll up, enclosing filling. Wrap in plastic wrap and chill until serving time. 4 sandwiches
5.) Roast Beef Roll-Ups
Prep: 15 minutes
Servings: 6-8 servings
1/2 lb. deli-sliced roast beef
4 large flour tortillas
1 (8 oz.) container whipped cream cheese
1/2 cup red onion, thinly sliced
2 medium tomatoes, thinly sliced
1/2 cup romaine lettuce or basil leaves
Place a flour tortilla on a cutting board and evenly spread a thin layer of cream cheese onto tortilla.
Working at the edge closest to you place 2 slices of roast beef, red onion, tomato and lettuce.
Starting at one end, roll tortilla and secure with a wooden toothpick.
Repeat with remaining tortillas and ingredients.
Place tortilla rolls in a plastic storage bag or wrap in plastic wrap, and place in the refrigerator to chill.
Before serving, slice each roll-up into ½ inch thick pieces. Serve immediately.
